The Lamb Roast.


Marion’s culinary education continues with the introduction of the Aussie lamb roast and gravy to the Brothers of Charity. As the Guthrie clan know only too well this is one of Marion’s signature dishes! Sadly, I have to admit, that there was a distinct lack of mint sauce – and mint is readily available in the markets of Ayacucho! However, the shank did not last too long – just like home.
It is worth noting that Marion was also offered the sheep's 'sack' when purchasing the actual leg! The locals were very amused when they saw the shock on her face. She refused the offer on the grounds that sheep's testicles are not on her culinary recipe list, and also we really did not need an entree! However, the Brothers were very disappointed to hear this because they considered them a delicacy.
The fruit drink which you see in the picture above is blended tuna fruit. Nothing to do with the fish! Tuna is a tropical and semi tropical fruit of the cactus plant and it comes in three colours – red, yellow and white. It is about the size of large lemon. When you purchase it the cactus needles have already been removed so you simply peel the outside and put it in the blender. The result is delicious, and apparently extremely healthy.
